how do one cut of npc head for bounties? sometimes they die with all their parts intact. sorry noob question.

Hello guys im pretty new to this game, i just build an outpost but i didnt know there are scripted attacks happening...so i build a wall using shift+f12 but the problem is they can pass thru the wall like some sort of ghost.. what went wrong here?
