I have set it to 2 and it actually seems alright. It will be available in the next construction set, under global settings-> "max num attack slots"
Awesome, thanks, I'll see if I can't play around and find some fun numbers.

And how can 2 be too high? Even the best person would be hard pressed to defend from both at the same time.
You may just need to increase the speed of blocking, you could block 2 people at once if they didn't attack at times close enough together.
But if they both swung at the same time, your character would have to counter one by attacking them and downing them with a counter in time to get the 2nd before his sword slashed open the back of your leg.
I assume, a high level character will be fine even with 5 attacking at once. But I'm thinking really high level.

EDIT:
I forgot, this could tie in with the 'mass combat' skill in your skills tab. How well you work in and against groups. A.K.A. coordination.

I am very very far away from being uber (so far I am drawing mobs to near the guards, and joining in the attacks as me and sword dude suck...)

And although I think it sounds great that you can become the ultimate warrior and take on whole towns (after you have played the game for a long time to build the skills, not just 5-8 hours), there still should be an element of tactics to it.
You wander into the center of the town and everyone rushes you at the same time, you are not going to be able to block all attacks and will eventually go down.
Great example of this would be old Bruce Lee or Jackie Chan movies. When they all rush, yes he fights them off, but they are quite often landing blows on him because they are attacking from all sides. Obviously for the movie he has to eventually win, but you get the idea.
I would love to see that also implemented in Kenshi.

If you instead use tactics and clear the town as you work through it, one on one or one on 5 even, they won't stand a chance, maybe even hitting you a number of times but obviously not for life threatening damage.
And maybe the head soldiers (seargents, officers, etc) could have further advantages when fighting you, greater skills in attack and defence.

Just my personal preference, because I think if it gets to the stage where you just obliterate every army you face without any trouble at all, then it makes the challenge go away.
Having to still think it through, and as your comments in the Game Design section state, still have a fear of death, makes it far more appealing.
