Text is really hard to read

Not sure where exactly this topic would go so i'm putting it here.
With the update i've noticed that just as nights are darker days are brighter too. This, unfortunately makes text hard to read during the day.

this is a known issue and has been for a long time.
it will be fixed when the new UI is added.

This is not UI problem this is lighting/shaders problem look at this night screens everything is totally overburned and characters look like chrome.

thats a differant issue
you first talked about text. not accual picture quality
Go thru your video options ingame.
Can also turn Vsynce on, Shaders on.
see if any of those help

No that's not he can't read text because on day is everything white i can't see anything because on night everything is black = lighting/shader problem.
Vsynch
Synchronize you frame rate with monitor refresh rate this help prevent half rendered frames artifacts.
Shader
Is material used on models and i really can't turn on shaders because they are on:)
