How to edit backend function?

Me and another person are trying to edit the functionality of first aid kits/splint kits to dismember people instead. We are aware there is already a tool for this, but this mod would be of great convenience to a lot of people if we could get this working. If anyone know how to edit the item function field's function in the FCS, please let me know.
