Animals would be great, but there's more important features to implement right now.
Personaly, to continue on animals, I'd like to see a sort of legendary beast, feared by everyone, every hunters. Hey ! A hunter job, that would be cool ! Hunting down dangerous animals, selling skin, teeth, etc., getting rewards from civilians for killing a threatening beast that kill their cows.
As for the legendary beast, I was thinking about a sort of dragon, like a giant mutant reptile or something. Hunting and killing it would give you glory amongst hunters.
Chris, have you played Knights Of The Old Republic ? Do you remember that dragon you could hunt on Tatooine ? That was simply epic.

haveing something other than plants for food would be great, but considering we don't need to eat we don't need food either so the animals can wait.
also rogdan this isn't fantasy so he propably won't put dragons in the game, though this doesn't mean that there arn't other animals that could kill you. (plus a fire breathing dragon would be hard to fight without atleast a shield (which he might not make))

Not an actual dragon. In Star Wars Universe, there are what they call "Krayt dragons", powerful giant reptiles that can be hunted. No fire breath. I think that adapting that kind of fantasy legend in a realistic world would be interesting.
A giant sand worm in the desert
But I think that if it's going to be in the game, these creatures should be unique and feared by everyone.

Here's the thing though: Combat. They wouldn't fit at all into the current combat system and would require a whole lot of work, at least a beast of any substantial size. Something like a camel or a deer could just trample over you for combat. Sand Worms? Krayt Dragons? Not so easy.

Exactly the problem with implementing creatures. Combat system would need expanding. How do you have a sword fight with a lion?
You'd pretty much have to take a dodge or attack when they attack. Blocking is unlikely without a shield.
You could adopt a form of blocking by swinging early to drive him off.
But yeah lots of work and an already busy game. Might be neat way down the line but it's hardly concerning for now.
Small lizards and passive cow like creatures maybe?

Llamas? Maybe an emu or two.
Animations would be a pain. Predatory animals would most likely travel in packs and be able to out run the player, so group combat could get messy (Balancing issues). Plus the predators would constantly get into fights with the roaming dust bandits. ( In which will lower the wilderness threat level because one faction would weaken the other). Dust bandits VS Hungry bandits VS wild animals VS guards = One giant stand-off.
