I would like to know if it's possible to have two Kenshi installation side by side ?
It is to make an installation with the first one the stable branch and the second one the experimental branch.

Sure, i think it's possible, you'll just have to move your current installation someplace else, and redownload the other desired version into the old folger through Steam. You won't be able to launch both of them from Steam though, but other then that, it should be doable.

Copy the steam stable version outside the steam folders.
Though stable will be harder to update as experimental ussualy is several versions ahead before one of the older versions gets changed to stable.
You can do it. Just might require a bit of leg work to keep both updated.
