When I staarted playing the game I tried all the finest mods, I could find. But honestly, now I am playing a Game with only the "free" the hair mod (because it looks nicer) and I have more fun than ever.
In my opinion, the best is to just play and then see, if you think, "this or that" would be nice and then get the mod.
Also, I refrain from subscribing to any mods, which make the game easier, as adding more people or more possibilities to survive. My personal experience is, that I enjoy more playing while struggeling...

There is a mod which add some op Bakethings into the World. This is a good mod for beginners I think.

I would say any of the Trader Prices/Routes mods, which amplify the regional price/production differences. I think there are several, some amplifying the differences more than others.

Arguably, it makes the game easier. But it also gives a money-making lifeline early in the game, and ultimately you still need to run your caravan up-and-down the map and visit towns and have... well, running adventures.

Something like this, while compressing a bit the time you'd need to get a well equipped group up-and-running, eases a new player smoothly into the butter and gives a clear early-on objective. Once you have bit of bank, you can branch out into any of the other activities the game offers.

Still, if you are the type of player into min-maxing stuff, it could feel like it's making things too easy.
