I am confused regarding the weapon's stats. In-game cites the sabre class as the most damage dealing weapons, of which I assume is in terms of the cut multiplier (with katana class having a higher bleed multiplier), but when equipped sabres seem to lower attack while increasing defense. I have noticed earlier posts claiming heavy weapons are better for damage dealing but the attack vs defense discrepancy is throwing me for a loop.
What is the relationship between the class of weapon, their speed vs damage, and your character's attack/defense skills with sabres vs katanas (assuming equal skills in each)?
For those curious:
I have owned Kenshi for awhile but I have just recently gotten back into it with a significant amount of updates and mechanic tweaks seemingly applied. To start off, I love the progression and I have spent a decent amount of time trying to find the start/squad build I like, with a good deal of luck recently as the survivors and now have a band of five (4 fighters mixed and a medic) and mostly hanging around town training and looting.

Hmm I'll take a stab *nudge* *nudge* at it.
What sabers lower is Attack Skill, not attack strength. Attack skill modifies your speed, damage, and accuracy, but in the long run will be high enough that the amount lost from the weapon is negligible. Instead, to determine damage, you should look at the damage multipliers. Sabres, iirc, have both a dex and a strong multiplier, meaning that at max stats, it will do more damage than a weapon that has just a high dex multiplier or a high Street multiplier. It also trains both dex and star through use, making it good for getting to those high stats too.
Any weapon's speed will be modified by the dex of the character wielding it, but not all weapons actually train dex. Which is why it can be viable to have your heavy weapons characters start with a light weapon, to earn some initial attack speed bonuses, and then switch them to a heavy weapon.

As I primarily use katanas, I found they give best growth on dexterity and negligible strength gain, though the wakizashi, ninja blade, and thin/light katana are best suited for such training due to 1kg weight. I admit that I have difficulty perceiving any differences of growth between 1kg and 2kg or greater katana-class weapons. Of course, raising the Katana combat skill also increases the damage dealt, in combination to dexterity, which increases cut damage. Strength increases blunt damage, which much of non-katana weapons use, though heavy weapons benefit most in terms of the sheer mauling force that plate armor has issues mitigating.
Come to think of it, hacker-class weapons are well-balanced in terms of blunt and cut power, at the expense of reduced bleed potency that katanas excel in. They are there to wreck parts, not have them bleed out. As much as the description gives, hacking weapons don't have much to branch out from and may be suited as a beginner's weapon if dexterity's of no concern.
I usually have units use only 1kg katana-class weapons until they reach dex 50+ or their attack speed reaches 1+, which I have them authorized to use heavy weapons appropriate to their weight limit. Planks are often used as they balance power and speed into a heavy weapon class, Fragment Axes and heavy bars delivers potentially fatal blunt damage when wielded with enough strength to deliver and enough dexterity to at least block in time.
There is a one-person save file with me that have the strength and dexterity of 70+ through training and combat alone since the .67 version days, wielding an Edge Type 5 Plank that tore through unfortunate dust bandits and their armor dead in a fast baseball-like swing.
